Jesse Albertini is the owner and chef behind Sfoglina (a woman who rolls and spreads out pasta dough). Using local heirloom and heritage grains that have been stone milled and slow dried not only creates a better flavor, but a nutrient-dense pasta that deliciously lends itself to everything from a light olive oil sauce to a dense bolognese.
